Garlic, Dill & Scallop Risotto-Date night Special

Indulge in the perfect blend of flavors with Garlic, Dill & Scallop Risotto—a dish that combines the elements of a date night and comfort food. To prepare the risotto, finely dice 4 cloves of garlic for every onion and sauté them in olive oil until translucent. Add Arborio rice and cook for a few minutes before adding your choice of chicken, fish, or vegetable stock. Reduce for 15 minutes, then add 4 heaping scoops of Butter Buddies Garlic and Dill butter, salt, pepper, and around 0.5 cup of heavy cream per person. Cook on medium heat for another 10-15 minutes until you achieve your desired texture.

For the scallops, start with a hot pan and some oil. Dry the scallops with a paper towel, shape them with your hand, and season with salt and pepper. Place them in the pan over medium heat for 1.5 minutes per side, then add 2 scoops of Garlic and Dill Butter Buddies and baste the scallops with the butter sauce using a spoon. Transfer to the oven and cook for 2 minutes until the internal temperature reaches 174 degrees Fahrenheit and the scallops turn opaque white. Let them rest for 2 minutes.

Serve the risotto in bowls, top with the scallops, and garnish with fresh dill.
